The other night I went digging through the bottom of my onion basket and pulled one out that felt wrong before I even looked at it. Soft on one side, a little damp, the kind of thing that had clearly been hiding down there a while. That squishy spot is usually the first clue an onion is bad. The good news is you can catch almost all of it with three quick senses: look, feel, and smell. Once you know what you’re checking for, it takes a couple of seconds.
