I finally got the recipe out of her last month and I’ve made them twice since then. The second time, I cut them into smaller squares because they disappeared so fast the first time I barely got one myself.
What makes these so dangerous is how simple they are. No oven. No mixer. Just a bowl, a spoon, and about 15 minutes of actual work. The peanut butter layer is creamy and dense, almost like the inside of a giant Reese’s cup, and that chocolate topping sets up perfectly in the fridge — not too hard, not too soft. Just enough give when you bite through.
I use a mix of mini Reese’s cups, chocolate chips, and peanut butter chips on top because it makes them look ridiculously good, but honestly you could skip that part and they’d still vanish. The crunch from the graham cracker crust against that smooth peanut butter filling is really all you need.
Fair warning: these are rich. Like, one square is genuinely enough. But you’ll want two anyway.
**INGREDIENTS:**
**For the crust & peanut butter layer:**
• 2 cups graham cracker crumbs (about 14–16 full crackers, crushed)
• 2 cups powdered sugar
• 1 cup creamy peanut butter
• 1 cup unsalted butter, melted
• 1 tsp vanilla extract (optional but adds warmth)
**For the chocolate topping:**
• 1½ cups semi-sweet chocolate chips
• 3 tbsp creamy peanut butter
**For topping (optional):**
• Mini Reese’s cups, chopped
• Chocolate chips
• Peanut butter chips
• Crushed peanuts
**INSTRUCTIONS:**
Line a 9×13-inch pan with parchment paper, leaving some overhang on the sides for easy lifting.
In a large bowl, mix the graham cracker crumbs, powdered sugar, peanut butter, melted butter, and vanilla until fully combined and smooth.
Press the mixture firmly and evenly into the bottom of the prepared pan. Use the back of a measuring cup to really pack it down.
In a microwave-safe bowl, melt the chocolate chips and 3 tablespoons of peanut butter together in 30-second bursts, stirring between each, until completely smooth.
Pour the melted chocolate over the peanut butter layer and spread it evenly with a spatula.
While the chocolate is still soft, scatter your toppings over the surface — press them in gently so they stick.
Refrigerate for at least 2 hours, or until the chocolate is fully set.
Lift the bars out using the parchment overhang, then slice into squares with a sharp knife. Wipe the knife between cuts for clean edges.
Store in the fridge in an airtight container. They’ll keep for about a week, but they never last that long.
Saving this one for your next potluck — trust me, you’ll be the one everyone’s asking for the recipe. Would you go heavy on the Reese’s topping or keep it simple with just chocolate?
