8 pieces of chicken
2 cups buttermilk
2 cups all-purpose flour
1 tbsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
1 tsp black pepper
1œ tsp salt
œ tsp cayenne pepper, optional
1 tsp baking powder
Oil for frying
Directions:
1) Place the chicken in a large bowl and pour the buttermilk over it. Add a little salt, pepper and paprika. Marinate for at least 2 hours, or overnight for even more flavor.
2) In another bowl, combine the flour, paprika, garlic powder, onion powder, oregano, black pepper, salt, cayenne and baking powder.
Remove each piece of chicken from the buttermilk and coat it generously in the seasoned flour. Press the flour onto the chicken to create a thick, craggy coating.
3) Heat the oil to about 350°F / 175°C. Carefully add the chicken, working in batches so you donât overcrowd the pot.
4) Fry for about 12â15 minutes, turning occasionally, until deeply golden, crispy and fully cooked inside. Chicken should reach 165°F / 74°C internally.
Transfer to a wire rack and let it rest for a few minutes before serving.
5) Serve it with fries, coleslaw, biscuits or your favorite dipping sauce. đ€€
