Choosing a Keto-Friendly Sweetener
A suitable granulated sweetener can help provide the sweetness of a traditional lemon cake without using ordinary sugar.
Erythritol-based sweeteners and monk fruit blends are common options. However, their sweetness varies by brand, and some erythritol products can produce a cooling sensation in the mouth.
Powdered sweetener can be particularly useful if you want a smoother texture. If using a granulated product, check whether it dissolves well before adding it to the yogurt mixture.
Start with the amount recommended by the manufacturer for replacing approximately half a cup of sugar. Taste the mixture before adding the eggs, and adjust the sweetness if necessary.
Do not assume that every product marketed as a natural sweetener is keto-friendly. Some blends contain dextrose, maltodextrin, or other ingredients that contribute carbohydrates.
Equipment Needed
- One 8-inch round cake pan
- Baking parchment
- A large mixing bowl
- A medium mixing bowl
- A whisk or electric hand mixer
- A flexible spatula
- Measuring cups and spoons
- A fine grater or zester
- A lemon juicer
- A cooling rack
- A fine-mesh strainer, optional
A springform pan can make the finished cake easier to remove, but an ordinary cake pan also works well when lined with parchment.
Step 1: Prepare the Oven and Baking Pan
Preheat your oven to 325°F (160°C).
Allow the oven to heat fully before placing the cake inside. A moderate oven temperature helps the eggs set gradually and reduces the likelihood of an overly browned surface or a dry edge.
Grease an 8-inch round cake pan lightly with butter or oil. Line the bottom with a circle of baking parchment. If your pan has removable sides, make sure it is assembled securely.
Because this cake contains a high proportion of yogurt and eggs, it is naturally softer than a traditional flour-based cake. Parchment makes it much easier to remove the cake without damaging the sides.
