How to Make a Delicious Hamburger and Potato Casserole

A creamy, cheesy hamburger and potato casserole combines ground beef, thinly sliced potatoes, and a rich sauce for a hearty, family-friendly meal.

Ingredients

  • 1–2 lbs lean ground beef
  • 4–6 medium russet potatoes, peeled and thinly sliced
  • 1 can (10–10.5 oz) condensed cream of mushroom or cream of celery soup
  • 3/4–1 cup milk or half-and-half
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 2–3 cups shredded cheese (cheddar, Colby Jack, or a mix)
  • 1–2 tsp seasoning salt
  • 1/2–1 tsp black pepper
  • Optional: paprika, Italian seasoning, Worcestershire sauce, chopped green onions for garnish

Instructions

  1. Preheat Oven: Set to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook Beef: In a large skillet, sauté onions and garlic in olive oil until soft. Add ground beef, season with salt, pepper, and optional spices, and cook until browned. Drain excess fat.
  3. Prepare Sauce: In a bowl, whisk together the condensed soup and milk until smooth. Stir in 1 cup of shredded cheese.
  4. Layer Casserole: Place a layer of sliced potatoes in the baking dish. Add half of the cooked beef, then drizzle half of the sauce over it. Sprinkle with some cheese. Repeat layers with remaining potatoes, beef, and sauce, finishing with cheese on top.
  5. Bake Covered: Cover with foil and bake for 1 hour.
  6. Bake Uncovered: Remove foil and bake an additional 20–30 minutes until potatoes are fork-tender and cheese is melted and lightly browned.
  7. Rest and Serve: Let the casserole sit for 5–10 minutes before serving. Garnish with chopped green onions or parsley if desired.

Tips for Best Results

  • Slice potatoes thinly and evenly (a mandoline works well) to ensure even cooking.
  • Drain ground beef thoroughly to prevent a greasy casserole.
  • Customize with vegetables like peas, corn, or bell peppers.
  • Swap cheeses or soups for different flavors (cream of chicken, cheddar, or pepper jack).
  • For a make-ahead meal, assemble the casserole and refrigerate for up to 24 hours before baking.

Storage and Freezing

  • Refrigerate: Store leftovers in an airtight container for 3–5 days.
  • Freeze: Wrap tightly in foil or use a freezer-safe container for up to 2–3 months. Thaw overnight in the fridge and reheat at 350°F until warmed through.
  • Reheat: Microwave individual portions or bake the entire dish covered in the oven until heated.
This casserole is a comforting, budget-friendly meal perfect for weeknights, potlucks, or family dinners, and it pairs well with steamed vegetables, green salads, or garlic bread for a complete meal.
