Instructions:
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or baking dish with cooking spray or a little olive oil.
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and mushrooms, if using. Cook for about 4–5 minutes, stirring occasionally, until the onion softens and the mushrooms begin to brown.
- Add the chopped spinach and cook for another 1–2 minutes, just until the spinach wilts. Remove the skillet from the heat and allow the mixture to cool slightly.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until smooth and well combined.
- Stir in the shredded mozzarella or Swiss cheese and the feta or Parmesan, if using.
- Add the cooked spinach, onion, and mushroom mixture to the egg mixture. Stir gently until everything is evenly distributed.
- Pour the mixture into the prepared pie dish and spread it out evenly.
- Bake for 30–35 minutes, or until the center is set and the top is lightly golden.
- Remove from the oven and let the quiche rest for 5–10 minutes before slicing.
Serve warm or at room temperature.
This easy crustless spinach quiche is perfect for breakfast, brunch, lunch, or a light dinner. It can also be made ahead of time and reheated when needed.
