For the Crispy Cauliflower

  • 1 large head cauliflower, approximately 600–650 g
  • 1 large egg
  • ½ cup (45 g) finely grated Parmesan cheese
  • ⅓ cup (32 g) finely ground almond flour
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp black pepper
  • ¼ tsp salt
  • ½ tsp Italian seasoning
  • 1 tbsp olive oil
  • 1 tbsp finely chopped fresh parsley, for garnish

For the High-Protein Dipping Sauce

  • ½ cup (120 g) plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp lemon juice
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp chili powder, optional
  • ⅛ tsp salt
  • 1 tsp chopped fresh parsley

Ingredient Notes: Use plain, unsweetened Greek yogurt. For the lowest-carb version, choose almond flour and Parmesan without added ingredients. If you have a nut allergy, almond flour should not be used without reformulating the coating.


Directions

1. Prepare the cauliflower

Preheat your oven to 425°F (220°C).

For an air fryer, preheat to 400°F (200°C) for approximately 3–5 minutes.

Cut the cauliflower into medium-sized florets of approximately equal size.

2. Dry the cauliflower thoroughly

Wash the florets and dry them extremely well using clean kitchen towels or paper towels.
